Wine and cheese have always been a simple match. Did you know that eating cheese while drinking wine affects the taste and choice of wine? In the French city of Dijon, they found that cheese consumption had an impact on the description of the taste for all types of wine and in most cases it affected their preference. However, none of the cheeses caused the taste of the wine to be lost. It was found that cheeses reduce the duration of bitterness dominance in red wines and increase their aromaticity. In sweet white wines, the duration of sweetness dominance did not change even after consuming cheese, but in dry white wines, cheese had a great impact mainly on the aroma.
